It typically starts with roles such as a kitchen helper, apprentice or line cook in a sushi restaurant where they learn basic kitchen skills and Japanese cuisine. Some aspiring Itamaes also work as sous chefs to gain more hands-on experience. The most important certification for a sushi chef is the Food Handler's Card, but a formal culinary education and additional certifications like the Certification for Japanese Culinary Skills or the All Japan Sushi Association certification can boost their career.
