Job Summary

The Banquet Cook is a vital member of the culinary team, responsible for preparing high-quality dishes for banquets, catered events, and special functions in accordance with the hotel’s standards and guest expectations. This position requires advanced culinary skills, the ability to handle large-volume production without compromising quality, and a strong focus on timing and presentation. The Banquet Cook plays a key role in coordinating with the kitchen and banquet service teams to ensure seamless event execution while maintaining cleanliness, food safety, and efficiency.

Essential Job Duties and Responsibilities

  • Prepare and cook banquet menu items according to recipes, quality standards, and event specifications.
  • Ensure all dishes are consistently high in quality, properly portioned, and beautifully presented.
  • Set up and stock banquet kitchen stations with necessary ingredients, tools, and supplies.
  • Coordinate food preparation and timing with Banquet Chef, Sous Chef, and banquet service staff.
  • Monitor food levels during service and replenish as needed to meet guest demand.
  • Maintain strict cleanliness and sanitation standards in compliance with health and safety regulations.
  • Assist with banquet inventory and ensure proper labeling, storage, and rotation of food products.
  • Safely and efficiently operate kitchen equipment, including ovens, grills, fryers, and mixers.
  • Work collaboratively with banquet servers and other departments to deliver exceptional guest experiences.
  • Participate in pre-event meetings and kitchen briefings to review menus, timelines, and special requests.
  • Arrive on time for scheduled shifts, fully prepared for work, and adhere to the company’s attendance policies.
  • Contribute to a positive, team-oriented culture with high standards for food quality and service.

Physical Demands:

  • Ability to stand, walk, bend, and reach for extended periods.
  • Lift up to 50 pounds occasionally.
  • Work in hot, humid kitchen environments during high-volume service.
  • Thrive in a fast-paced, deadline-driven banquet production setting.

Education and/or Experience

  • Minimum 2–3 years of experience in a high-volume kitchen, preferably in banquets or luxury hospitality.
  • Advanced knowledge of culinary techniques, large-batch cooking, and food preparation.
  • Proven ability to follow recipes and instructions accurately while managing multiple tasks.
  • Familiarity with banquet-style plating, buffet setups, and varied cooking methods.
  • Excellent communication and organizational skills.
  • Ability to work flexible schedules, including early mornings, late evenings, weekends, and holidays.
  • Must be able to obtain and maintain a Food Handler’s Certification throughout employment.

Skills/Specialized Knowledge

  • Strong troubleshooting and problem-solving skills in a high-pressure environment.
  • Ability to work independently while also thriving in a collaborative team setting.
  • Skilled at prioritizing tasks and meeting strict service deadlines.
  • Adaptable to changing menus, guest needs, and event schedules.
  • Must be able to obtain and maintain a valid Riverside County Food Handler’s card throughout employment.
