Tom Colicchio, via Crafted Hospitality, is seeking an exceptional Chef de Cuisine to lead The Mazes culinary team and help bring its mindful dining experience to life.

Role Overview

As Chef de Cuisine , you will be a senior leader and the culinary bridge between front- and back-of-house operations. Youll be responsible for overseeing all kitchen operationsfrom menu design to food cost control, hygiene standards, and team development. Your role will ensure that The Maze delivers an elevated, intentional dining experience aligned with its community values.

Core Responsibilities

  • Lead daily kitchen operations, ensuring excellence in food preparation, presentation, and consistency.
  • Collaborate on menu development with Tom Colicchios team, prioritizing seasonal, locally sourced ingredients that align with The Mazes ethos.
  • Minimize waste through strategic creative planning.
  • Monitor daily production: managing cost, ordering, quality, and consistency.
  • Direct and develop all kitchen staffline cooks, prep cooks, portershandling scheduling, payroll, training, coaching, performance reviews, hiring, and retention.
  • Foster a team-oriented and inspiring work environment that enhances service quality and productivity.
  • Manage operating expenses via effective budgeting, purchasing, and inventory control.
  • Ensure strict adherence to sanitation and food safety standards, in compliance with NYC Department of Health regulations.
  • Coordinate with management to align culinary efforts with overall club operationsmenu tastings, pre-service briefings, operational planning.
  • Gracefully interact with members to ensure satisfaction and respond to requests with creativity and sincerity.
  • Support private dining and special events: collaborating with the Private Dining & Events team from planning to execution.
  • Participate in financial reviews such as monthly P&L meetings alongside the Financial Controller and operations leadership.

Qualifications

  • Minimum 3 years of supervisory or chef de cuisine experience in high-caliber culinary environments with excellent operational and guest-service standards.
  • Culinary school degree is preferred.
  • Strong connections with local farms, fisheries, and wholesale suppliers are a plus.
  • Experience managing and mentoring a team of 25+ kitchen staff.
  • Proficiency in kitchen operations, sanitation, and general facility knowledge.
  • Fluent in English; Spanish language skills are advantageous.
  • Excellent communication, organizational, and leadership capabilities.
  • Knowledge of New York State and NYC health and safety regulations.
  • Strong culinary knowledge, including menu development and terminology.
  • Capability in reading, interpreting, and composing business documents, reports, and procedural manuals.
  • Able to present and respond effectively to management, team members, and guests.
  • Resourceful problem solver with a creative approach in dynamic settings.
  • Comfortable working independently and collaboratively in a fast-paced environment.
  • Proficient in Windows, Excel, OpenTable, POS systems like Micros, and basic database tools.
  • Available for evening, weekend, and holiday shifts.
  • Able to stand for extended periods and handle moderate physical demands.

Physical Requirements

This role involves typical kitchen physical demands: prolonged standing, walking, bending, lifting up to 50 pounds (and occasionally more), with required visual acuity for close work, color perception, and depth judgment. Reasonable accommodations are available as needed.

Compensation Details

Compensation: Salary ($110,000.00 - $120,000.00)
