Mamani, the newest restaurant from the Dallas-based hospitality group FLHO, features French cuisine with an Italian accent from Executive Chef Christophe De Lellis. The cooking is approachable, celebrating simplicity, clarity of flavor and the excellence of the ingredients. Co-owners (and FLHO principals) Brandon and Henry Cohanim drew inspiration for the project from their French-born grandmother, whom they fondly call Mamani. Paris-born chef De Lellis brings inspiration from his food-loving grandparents as well; all four are Italian. Mamani is the flagship restaurant for the new Quad development in Uptown.
Job Summary:
We are seeking an experienced and talented Assistant Chef to join our team. This salaried position requires a minimum of 3 years of experience in a restaurant setting. The Assistant Chef will work closely with the Head Chef to oversee daily kitchen operations, ensure the highest quality of food preparation and presentation, and contribute to menu development. This role is ideal for a culinary professional looking to advance their career in a dynamic and growing restaurant.
Key Responsibilities:
- Assist the Head Chef in managing all aspects of kitchen operations, including supervising kitchen staff, ordering supplies, and maintaining inventory.
- Oversee the preparation and presentation of dishes to ensure they meet the restaurants high standards.
- Collaborate with the Head Chef on menu development, including creating new dishes and refining existing ones.
- Ensure that all kitchen staff adhere to safety, sanitation, and food handling regulations.
- Train, mentor, and motivate kitchen staff to maintain a high level of performance and consistency.
- Monitor food costs and portion control to maintain profitability while ensuring quality.
- Participate in the planning and execution of special events and seasonal menu changes.
- Step in for the Head Chef as needed, taking full responsibility for the kitchen in their absence.
- Maintain a clean, organized, and efficient kitchen environment.
Qualifications:
- Minimum of 3 years of experience working in a restaurant kitchen
- Exceptional culinary skills with a keen eye for detail and presentation.
- Ability to work effectively under pressure in a fast-paced environment.
- Excellent leadership, communication, and organizational skills.
