Job DetailsPrep cooks execute recipes and set the line up for smooth service. Youll open the kitchen, prep proteins and skewers, and get all hot sides and cold sides ready before service. Youll also produce our house spice blends, marinades, and sauces. Because our kitchen is very open with a chefs counter, prep cooks must keep a tidy station and be comfortable if a customer asks a light question while youre working.
Responsibilities
Open the kitchen: review pars, set up stations, prioritize the prep list.
Execute recipes to spec (weights, yields, textures); record batch notes.
Prep proteins and portion/skewer to spec; vacuum-seal/label as needed.
Prepare hot sides (rice, beans, corn, kale) and cold sides (couscous, tomato salad) to service-ready condition.
Produce house spice blends, marinades, and sauces ; taste to spec.
Mix/rest/portion flatbread dough to spec.
Label/date/FIFO; cooling procedures, and sanitizing.
Keep fridges/freezers, dry storage, and prep areas clean, organized, and stocked; call low stock early.
Support line setup and handoff before doors open.
Requirements
2 years prep experience (or strong knife skills and eagerness to learn).
Can follow recipes exactly and hit consistent yields.
Maintain a clean and organized workstation. Bedetail-oriented and maintain good personal hygiene.
Solid food-safety practice: time/temperature, cooling, cross-contamination prevention, allergen awareness.
Reliable communicator; team player who looks out for the whole kitchen.
Able to lift 40 lb and stand for shifts; CA Food Handlers Card (or within 30 days).
Bonus if youve worked in skewer-driven kitchens & have experience with Kenyan or Nigerian cuisine.

Option A: MondayFriday, AM shifts (opening prep).
Option B: SaturdayTuesday, AM shifts (opening prep).

$18$20/hr DOE + pooled tips.
