Job Details NOBU, the world-renowned Japanese Restaurants, is hiring for its Houston location. We are seeking highly motivated and energetic professionals to join us.Applicants must have 2+ years experience working in a high volume and upscale establishment. Candidates must be punctual, communicate effectively, and maintain composure while multi-tasking in a high-stress environment. *Must be available evenings, weekends, and holidays with open availability.
Main Duties/Responsibilities, but are not limited to:
- Supervise and oversee staff regarding all steps in the preparation of Nobu food menu items in all day-to-day work.
- Oversees the daily operations of the kitchen, including menu development, inventory and purchasing of supplies, and cost control.
- Creates Staff schedule and changes.
- Oversee and conduct monthly inventory projects and reports.
- Manages BOH team: training, standards, performance management, PTO, payroll, et al
- Ordering/Inventory
- Attends Dept. Head Meetings, representing the kitchen Dept.
- To effectively control the food production giving maximum quality and yield.
- To constantly check quality and quantity of food going out of the kitchen.
- To control all food storage activities to ensure that all food is kept in prime condition and a good method stock rotation is used in all areas and sections of the kitchen.
- To achieve the best gross profit levels in relation to budgets and turnover.
- To keep waste to an absolute minimum.
- To ensure each section is controlling mise-en-place quality, quantity, and is storing it correctly.
- To ensure Health & Safety training is completed and recorded in line with the Nobu Company guidelines.
Required Skills/Qualifications:
- Facilitates all food preparation requiring frying, grilling, sauteing, and prepping for restaurant.
- Strong knowledge of food and beverage.
- Hands-on approach to all operational aspects.
- Excellent communication skills and computer skills.
- Initiative and Self-motivated.
- Ideal training and coaching skills.
- Time management skills
- Organization, cleanliness and following all health standards
