The Sous Chef will assist the Executive Chef with the supervision of the culinary, production and multiple restaurant teams. This position also supports the effective planning, purchasing and preparation of appealing and wholesome menus in a safe, sanitary environment that complies with state and local guidelines.

Shift(s): Full-Time

Various Shifts to include weekends

MAJOR ACCOUNTABILITIES/ESSENTIAL JOB DUTIES:

  • Interview, hire, supervise, coach, evaluate, discipline and assist employees in setting and meeting performance goals. Develop and monitor performance and responsibilities of assigned staff while monitoring staffing patterns.
  • Provide training as needed to ensure success of staff
  • Attend trainings and in-services to meet state regulations and personal and professional standards and expectations
  • Supervise and coach culinary team and sanitation crew
  • Ensure proper recipes are being utilized and update as needed
  • Assist with food and non-food ordering and inventory control
  • Conduct audits to ensure sanitation and repair needs are met, including follow-through with corrections
  • Produce menu items for catered or other special events
  • Create regular menu items as necessary
  • As requested, assist with the department budget, statistical monthly report, budget variance report and other specialized reports
  • Communicate with residents as needed to ensure concerns are being addressed
  • Additional duties as assigned

  • Cutlery
  • Ovens, stoves and all related kitchen equipment
  • Computer and general office equipment

PHYSICAL REQUIREMENTS:

  • Ability to withstand extreme temperatures
  • Ability to lift up to 50 pounds without assistance, 50+ pounds with manual or mechanical assistance
  • Ability to stand, stoop and bend for up to 8 hours

REQUIRED KNOWLEDGE, SKILLS AND ABILITY:

  • Competent in overall culinary skills, including methods and food preparation
  • Competent in food safety and sanitation as put forth by the state and federal regulations

DESIRED KNOWLEDGE, SKILLS AND ABILITY:

  • Restaurant or country club background
  • Long term care facility background

REQUIRED EDUCATION AND EXPERIENCE:

  • High School Diploma or Equivalency
  • Two years of experience in a supervisory capacity in a food service industry
  • Serv Safe certified

DESIRED EDUCATION AND EXPERIENCE:

  • Culinary certification or degree, including Sous Chef Certification
  • One year management experience

REQUIRED BEHAVIORAL COMPETENCIES:

  • Ability to manage multiple tasks
  • Must work well and maintain composure under pressure in a fast paced environment
  • Patience and tolerance with others, including team members and customers
  • Ability to delegate effectively to others
  • Leadership and management skills to effectively lead a group of others
