Job Overview

Doubletree by Hilton Newark Penn Station is seeking for an Sous chef for a busy downtown hotel in Newark NJ. The Sous Chef is responsible for kitchen operations including food production, scheduling and labor relations, ordering, menu engineering and P&L accountability while enforcing all food safety regulations, creating new menus for restaurant and Banquets. The Sous chef preferably should have 2 years' experience working in the culinary field, as well as managing in a union environment.

Responsibilities:

  • Create new entrees for the menu
  • Ensure all food safety regulations are followed
  • Inspect the quality of the food
  • Be aware of new culinary trends and recipes
  • Meet Hiltons brand standards
  • Hire and train new kitchen staff
  • Manage special dietary needs
  • Oversee purchasing to stay within certain budget

Qualifications:

  • Ability to manage a kitchen team
  • Budgeting skills to control costs
  • Strong Leadership Skills and business Acumen
  • Ability to multi-task
  • Deep knowledge of food industry trends
  • Incredible time management skills
  • Strong union experience preferred
  • Menu Engineering
