Summary of Functions
As Lead Line Cook, you will work closely with our Chef and Sous Chef to ensure that each dish reflects the quality and creativity our guests expect. This is a role for someone who thrives in a fast-paced kitchen, has a strong culinary foundation, and enjoys leading by example. Prepares and plates dishes according to menu specifications. Duties include preparing food and maintaining sanitation standards.
Essential Duties and Responsibilities
• Ensures compliance with the Kalispel Tribe of Indians, Washington State Regulations and Kalispel Golf & Country Club (KGCC) Policies and Procedures.
• Responsible for ensuring health and sanitation standards.
• Assists with daily, weekly, and month end inventory.
• Assists with orderings and receiving inventory and product.
• Maintains high standards of quality and appearance for all food prepared and served.
• Performs quality control checks before, during, and after production to ensure highest quality at all times.
• Maintains exemplary attendance and work standards as a role model for culinary team members.
• Prepares ingredients ahead of schedule according to the prep sheet.
• Ensure the preparation station and line is set up and stocked.
• Prepares components of each dish on the menu by chopping vegetables, cutting meat, and preparing sauces.
• Cooks and assemble dishes as indicated by recipes and specifications.
• Cook food items by grilling, frying, sautéing and other cooking methods to specified recipes and standards.
• Perform portion control and minimize waste to keep cost within forecasted range.
• Ensure that all dishes are prepared in a timely manner by restocking ingredients at workstation and meeting prep times to ensure smooth delivery.
• Set up and clean station according to restaurant protocol.
• Ensure quality and freshness of ingredients and products.
• Perform additional tasks as assigned by the Sous-Chef or Head Chef.
• Responsible for maintaining a clean and hygienic work environment, including kitchen equipment, tables and shelves at all times.
• Comply with applicable sanitary, health, and personal hygiene standards.
• Follows all food safety, sanitation, guidelines set forth by the FDA.
• Available to work any changes in hours deemed necessary for business levels.
• Responsible for maintaining a consistent, regular good attendance record.
• May be required to be a panelist for the Internal Review Hearings.

Education
• Preferred High School Diploma/GED.
Experience
• 1-3 years of experience cooking in a restaurant, hotel, or resort
• Experience working in a fast-paced, high-volume environment preferred

Other Requirements
• Ability to obtain and maintain a Tribal Work Permit.
• Washington State Food Handler Permit within 14 days of start date.
• Hepatitis A vaccination.
• Available and willing to work nights, weekends and holidays as required.
