Build + Elevate the Team
Train and mentor Line Cooks, Prep Cooks, and other culinary team members to uphold best-in-class culinary standards.
Conduct pre-shift meetings, manage daily prep lists, and oversee station readiness with discipline and efficiency.
Create a values-aligned culture grounded in accountability, respect, and passion for the craft.
Lead with Strategy + Precision
Manage food and labor costs with sharp decision-making and a focus on operational excellence.
Monitor inventory levels, ordering accuracy, and vendor quality to support seamless production.
Ensure fullpliance with health, safety, and gaming regulationsincluding food handling, sanitation, and venue policies.
Influence + Impact
Represent the kitchen in leadership discussions, cross-departmental collaborations, and strategy sessions.

Serv-Safe Certification preferred (required within 1 year)
Alcohol Awareness Certification (or ability to obtain within 2 months)
Proven ability to lead teams, drive quality, and deliver under pressure
Must be able to secure a license from Gaming Regulatory Authority (GRA)
Responsible for following all relevant Detailed Gaming Regulations (DGR's)
Mille Lacs Band Member and American Indian preference will be exercised in the hiring process
Physical Requirements and Work Environment
Flexibility to work evenings, weekends, and holidays as required by Guest needs or event schedules.
Will involve standing/walking for extended periods and light lifting during events.
