Were searching for a Head Baker to lead production, consistency, and training across our bakery team. This is a hands-on leadership role ideal for someone whos as passionate about systems and execution as they are about fermentation, lamination, and flavor.

The Role

As the Head Baker, youll oversee the daily production of all breads, viennoiseries, and savory bakesensuring everything meets Bonrues high standards. Youll lead the team through prep, proofing, and baking while maintaining quality, pace, and cleanliness from open to close.

What Youll Do

  • Lead daily bakery production: artisan breads, croissants, danishes, puff pastries, and savory bakes
  • Follow and enforce Bonrues established recipes and production methods
  • Manage mixing, shaping, proofing, and baking processes with consistency
  • Train and mentor bakers and prep team members
  • Maintain a clean, organized, and efficient bakery environment
  • Track inventory levels, report needs, and minimize waste
  • Monitor oven temps, timing, and product quality every batch
  • Coordinate with Executive Baker and other leads to maintain output and flow
  • Ensure all bakery items meet Bonrues taste, texture, and visual standards
  • Help implement and reinforce daily checklists, quality checks, and kitchen SOPs

Who You Are

You might be our next Head Baker if you:

  • Have 35 years of professional baking experience, with at least 1 year in a leadership role
  • Understand the science of fermentation, lamination, and dough handling
  • Are consistent, clean, and focused in a high-volume environment
  • Are an excellent communicator and natural teacher
  • Are comfortable delegating and owning production timelines
  • Are detail-obsessed and can spot quality deviations immediately
  • Hold (or are willing to obtain) a Food Handlers Permit
  • Can lift 50 lbs and stand for extended periods of time
  • Are excited to work early mornings and lead from the front
