Job Summary:

The Jones Assembly is seeking a talented and driven Sous Chef to join our culinary leadership team. As Sous Chef, you will play a critical role in executing service, mentoring the team, and upholding our standards of consistency, quality, and hospitality. You will work alongside the Executive Chef to lead a kitchen that blends classic technique with creativity, in a venue known for its bold flavors, high volume, and unforgettable guest experience.

Key Responsibilities:

Kitchen Leadership

  • Lead the kitchen team during prep and service, ensuring smooth communication, pace, and execution.
  • Support and enforce the Executive Chefs culinary vision and standards across all menu items.
  • Conduct daily line checks and tasting to ensure food quality, consistency, and cleanliness.
  • Set the tone for professionalism, teamwork, and a positive kitchen culture.

Training & Staff Development

  • Train and mentor cooks and prep team on technique, recipes, timing, and plating.
  • Provide on-the-fly coaching during service to uphold performance and standards.
  • Participate in hiring, onboarding, and evaluating kitchen staff.

Inventory & Cost Management

  • Assist with ordering, inventory counts, and receiving.
  • Monitor waste, portioning, and prep yields to help control food costs.
  • Collaborate with the Executive Chef on menu costing, prep planning, and waste reduction.

Sanitation & Safety

  • Ensure compliance with health and safety regulations (including temperature logs, storage, and cleaning procedures).
  • Lead by example in maintaining a clean and organized kitchen at all times.
  • Train staff on food safety, sanitation protocols, and equipment handling.

Administrative Support

  • Help with prep sheets, production lists, and daily task assignments.
  • Assist in planning and execution of special events, menu rollouts, and offsite activations.
  • Fill in for the Executive Chef as needed for meetings, ordering, or leadership coverage.

Qualifications:

  • 3+ years experience in a full-service, high-volume kitchen, with at least 1 year in a leadership role.
  • Strong technical cooking skills, palate, and plating sensibility.
  • Proven ability to manage a line, delegate tasks, and lead a team under pressure.
  • Knowledge of food safety, kitchen systems, inventory, and prep planning.
  • Excellent communication, time management, and team-building abilities.
  • ServSafe Certification preferred
