We are looking for a passionate baking professional with 1-2 years applicable bakery experience who is eager to learn,mitted to maintaining top quality, and works well on a team.
Qualifications:
- 1-2 year applicable bakery experience
- Open availability with reliable transportation (including Holidays/Weekends)
- Must be proficient in English
- Authorization to work in the U.S.
- Ability to work in a fast-paced environment, while maintainingposure
- Ability to lift 50 lbs
- Ability to follow Food Safety guidelines
Responsibilities:
- Open bakery and producing all pastries for the day including but not limited to croissants, specialty croissants, mixing drop biscuits, baking off cookie balls, muffins, scones, frying brioche donuts
- Bake off sourdough loaves and shaping baguettes
- Fill pastry case and ensuring perfect presentation prior to 8am
- Keep track of production schedule and ensuring any fillings, glazes, doughs, ingredients that need to be made get added to production
- Responsible for preparing donut and pastry fillings - creme patisserie, chantilly,potes, fruit curds
- Mix large volume doughs for next day's prep: croissant dough, brioche dough
- Measure and scale dry and wet ingredients according to written recipes with precision and accuracy
- Handmix sourdough batches of next day's production
- Viennoiserie lamination and shaping for next day's production
- Feed sourdough starter with care for next day's mix
- Close bakery workspace - ensuring everything is put away for next day; breads are pulled for morning shift
- Operate 40 qt mixer, rotating convection oven, deck oven
- Clean,anize, and maintain food storage for dry goods, walk-in cooler, freezer
- Check-in delivery invoices throughout the day from different vendors
- Assist in preparation and production of any pastries and baked goods throughout the day
- Maintain positive attitude and professionalism always
- Work well with the team to maintain a clean and presentable workspace
