Takes charge of daily operation of the kitchen and staff while preparing, seasoning, and cooking soups, meats, vegetables, and other foods following standardized recipes, as well as short order grill cooking while providing exceptional customer service for all patients and guests to the Cafe and Conference Center.
Essential Duties & Responsibilities:
- Cutting, chopping, assembling, cooking all food
- Monitoring and recording temperatures of food as well as cooling and freezing equipment
- Provide direction, decision making, critical thinking
- Customarily and politely answers department phone accepting orders and other requests.
- Consistently prepares and/or serves quality food items for all food services offered by Magruder Hospital following Ohio Department of Health Uniform Food Code and HACCP guidelines.
- Accurately measures and mixes ingredients according to standardized recipes to prepare soups, salads, gravies, desserts, sauces and casseroles.
- Routinely assists in menu planning.
- Accurately forecasts preparation amounts by reading menus and reviewing waste tracking sheets looking towards reducing waste.
- Observes and tests foods being cooked by tasting, smelling, piercing with a fork and inserting thermometer to determine that it is cooked, and acceptable for safe and desirable consumption.
- Supervises Food Service employees in the absence of the Food Service Director and Food Service Coordinator.
- Politely takes orders from customers and cooks food requiring short preparation time. Portions foods on serving plate, adds gravies and sauces and garnishes servings to fill orders.
- Accurately pulls meat and other frozen food items for weekly entree specials and special functions.
- Effectively and cooperatively works with other cooks and food prep employees to serve all patients, patrons to the Cafe and visitors to the conference center.
- Adjusts thermostatic controls to regulate temperature of ovens, grills and steam kettles.
- Consistently cleans food preparation equipment, steam tables and work areas.
- Consistently completes at least two tasks each week from the positional cleaning list.
- Maintains safe operation of equipment in work area and reports maintenance issues appropriately.
- Correctly sells change to register operators.
- Accurately and consistently verifies the monies in the safe.
- As assigned, accurately takes and records inventory amounts for food items in the coolers, freezers, and/or dry stock areas.
- Willingly cross-trains to other Food Service positions.
- Complies with federal, state, and local legal requirements by studying existing and new legislation; anticipating legislation; enforcing adherence to requirements; advising management on needed actions; ensures compliance with Joint Commission and other external and internal regulatory agencies.
- Maintains the integrity of confidential patient information in accordance with HIPAA and hospital policy, including accessing, using and disclosing patient information relevant to the individual employees job duties. Also maintains confidentiality of other customer and hospital business affairs.
- Adheres to the standards of Magruder Hospitals corporate compliance policies and seeks guidance and training when necessary to resolve questions about the policies. Reports violations in accordance with corporate compliance and organizational standards.
- Attendance is an essential function of this position. Reports to work on time and as scheduled; Shows respect for co-workers by following established break times; Keeps personal conversations and telephone calls to a minimum.
- Travel is primarily local during the business day, although some out-of-area and overnight travel may be expected.

- Must have formal or on-the-job training in food service preparation, cooking, estimating quantities of food needed, storing food and supplies, and in principles and requirements of sanitation and safety in handling food and equipment.

Preferred:
- High School Diploma or GED equivalent
- 2 years minimum experience in quantity food preparation
- 1 year minimum experience in short ordering cooking
- Previous experience supervising employees-minimum of 6 months experience
