Job Duties:
- Fryer Management:
- Conduct fryer safety procedures, including cold starting and filter maintenance.
- Set fryer temperatures (330F for chicken and fish, 350F for side fryers).
- Marination Process:
- Prepare marination by mixing marination mix, salt, water, and ice in designated tubs.
- Schedule draining and completion times for marination.
- Fryer Designation for Food Safety:
- Manage specific fryer duties, including load quantities, cook times, and stirring intervals.
- Filter Maintenance:
- Sift flour before and after every load of chicken and after every two tenders.
- Change filters every two loads for fryer and grease maintenance.
- Grease and Side Fryer Management:
- Change side fryers after lunch and dinner rushes.
- Product Marination:
- Marinate tenders, chicken, livers/gizzards, and fish following specific procedures.
- Batter Process:
- Prepare batter by adding batter mix and cold water to the batter pan.
- Monitor and change batter as needed.
