Supervise and inspect cleaning food preparation and service areas to ensure safe and sanitary food-handling practices. Season and cook special cuts of seafood for chicharron de mojarra, pescado zarandeado, filete de mojarra, camarones al Diablo, ceviche de camaron, and coctel de camaron; also, traditional Mexican food like bistek encebollado, tacos al pastor y de lengua, enchilada verdes and tostadas. Prepare garnishments, wash, peel, cut fruits and vegetables to prepare them for Mexican plates.
