Job Details We are seeking a passionate, skilled, and highly organized Lead Line Cook to help lead the kitchen of our authentic Italian trattoria. This role supports the Executive Chef in daily operations.The ideal candidate has a deep respect for culinary traditions and systems, ability to work as a team, and the ability to thrive in a fast-paced, high-volume environment while upholding the spirit and hospitality of a true trattoria.
Key Responsibilities :Assist the Executive Chef in all aspects of kitchen operations, including service execution, prep, and production
Maintain the highest standards of food quality, safety, sanitation, and presentation
Supervise, train, and mentor kitchen staff; lead by example in technique, timing, and professionalism
Maintain inventory control, food cost management, and waste reduction
Oversee and ensure the proper execution of all recipes, portioning, and plate presentations
Monitor and troubleshoot kitchen equipment maintenance needs
Uphold all health code and sanitation regulations in accordance with local laws and internal standards
Lead line during service; act as expeditor when needed to ensure smooth flow and quality control
2+ years senior kitchen leadership role
Strong knowledge of regional Italian cuisine, ingredients, and traditional cooking techniques
Experience with menu planning, inventory management, and supplier relationships
ServSafe certified or equivalent (or ability to obtain)
Strong organizational skills with the ability to multi-task and remain calm under pressure
A genuine passion for food, hospitality, and guest experience
Ability to work flexible hours including nights, weekends, and holidays
