The Ideal Candidate for this Position

We are seeking a passionate Executive Chef with proven experience in high-volume culinary operations, banquet production, and luxury guest service. This role is ideal for a strategic leader who thrives in a fast-paced, multi-outlet, and event-driven environment. The ideal candidate will have extensive culinary work experience. The successful candidate must have hands-on experience with a similar organization's level of service and operation.

What You Will Be Doing

As an Executive Chef, your crucial role oversees all kitchen operations, ensuring the highest standards of food quality, presentation, consistency, and sanitation practices. Your role will develop and execute menu items, manage kitchen staff, maintain a positive, productive and efficient kitchen environment. Kitchen Operations include Vivo Restaurant, L-Bar, In-Room Dining, Concierge lounge, banquet event space, employee cafeteria, dish room, and purchasing.

Job Requirements

Your responsibilities will include but not limited to:

  • Maintain complete knowledge of and ensure staff's compliance with all department/hotel policies and procedures.
  • Develop new menus and product development supported by accurate costing.
  • Develop and manage kitchen budgets including labor, food costs, and capital expenditures.
  • Maintain inventory systems, monitor waste, and drive efficiencies in food production and purchasing.
  • Execute menu tastings to potential clients.
  • Execute training of all menu items to the culinary team efficiently.
  • Daily Pre-shift with all culinary, and FOH staff.
  • Attend BEO meetings, weekly staff meetings, and effectively communicate all information needed to the culinary team for successful execution of events.
  • Monitor all stations, walk ins, storage, to ensure the quality of food product standards are met.
  • Must ensure sanitation and food standards are achieved at all times.
  • Understands all employee positions well enough to perform duties in employees' absence or determine appropriate replacement to fill gaps.
  • Brief kitchen staff daily about the upcoming and current functions.
  • Provides guidance and directions to team, including setting performance standards and monitoring performance.
  • Supervises and coordinates all activities of kitchen staff who are engaged in food preparation.
  • Able to coordinate banquet production and plating with the Banquet Chef, Executive Sous Chef, Sous Chef, and banquet kitchen staff.
  • Establish the days priorities and assign production and preparation tasks for the kitchen staff to execute.
  • Work with purchasing and receiving to better develop control procedures.
  • Effectively communicate both verbally and in writing with all departments related in the hotel.
  • Develop leadership talent and succession plans for key roles.
  • Recruit, train, and mentor a diverse culinary team including sous chefs, banquet chefs, cooks, and stewards.
  • Responsible for managing all day-to-day operations of kitchen.

  • Ability to multitask and stay calm under pressure.
  • Must be able to work a flexible schedule including nights, weekends and holidays.
  • Staging is required for this position.
  • You must have at least 5 year's experience in a culinary leadership role.
  • You must be able to pass a thorough background check as well as be drug free.
