Since 1994, Food Dance has been committed to building a thriving and sustainable local food system. We support artisans who practice craft food processes that have been around for generations.
We carefully choose ingredients for our food and drink.
We believe the closer to the source and the closer something is produced to our front doors, the better. We believe fresh, in-season foods provide the best flavor. We source sustainably and humanely raised meats, and butcher as much in-house as possible. We make great food by hand using time honored methods and whole ingredients from purveyors we trust and have built relationships with.
We sell food that tastes great, looks great, and is approachable.
We don’t take shortcuts when it comes to ingredients, cooking methods or preparation. Great flavors take time to develop, whether in the field or in our kitchen. We serve food with history, heritage and stories we know and enjoy sharing with our guests. We make food that as many people as possible can appreciate. Our food isn’t snooty or aloof on the plate, and won’t scare anyone with it’s complexities. We gladly offer tastes of our food to guests and staff as a way to share and learn thru the experience of food.
Every staff member is responsible for ensuring our food and drink reflect our high-standards.
We expect that it is everyone’s job to make great food and drink. So we graciously intervene when something is wrong, and we humbly correct an error. It is part of our job to talk, learn, and take part in creating the food and drink that make it onto the menus.
