We are seeking a highly skilled Professional Meat Chef specializing in Mediterranean and Middle Eastern cuisine to join our culinary team. The successful candidate will be responsible for planning, preparing, and overseeing the production of high-quality meat dishes, ensuring authenticity, consistency, and exceptional presentation. The role requires advanced knowledge of meat preparation techniques, traditional Mediterranean and Middle Eastern cooking methods, and kitchen supervision.
Key Responsibilities
Plan, prepare, season, marinate, cook, and present a variety of Mediterranean and Middle Eastern meat dishes, including grilled, roasted, braised, and skewered specialties.
Develop and maintain authentic menu items featuring beef, lamb, chicken, veal, and other meats commonly used in Mediterranean and Middle Eastern cuisine.
Determine food preparation methods, recipes, portion sizes, and presentation standards to ensure quality and consistency.
Prepare specialty meat products using traditional seasoning, marinating, curing, and grilling techniques.
Monitor food quality throughout preparation and service to ensure compliance with restaurant standards.
Supervise and coordinate the activities of cooks and kitchen helpers involved in food preparation and cooking.
Train kitchen staff in proper meat handling, preparation techniques, cooking methods, food safety practices, and presentation standards.
Estimate food requirements and maintain inventory levels for meats, spices, marinades, and related ingredients.
Inspect meat products and other ingredients to ensure freshness, quality, and compliance with company standards.
Assist in menu planning, recipe development, food costing, and production scheduling.
Ensure compliance with all applicable food safety, sanitation, health, and workplace safety regulations.
Minimize food waste through effective inventory management, portion control, and production planning.
Maintain a clean, organized, and efficient kitchen environment.
Employment Requirements
Completion of secondary school.
Minimum three (3) years of directly related experience as a Chef specializing in meat preparation and cooking in a commercial restaurant, hotel, catering, or similar food-service establishment.
Demonstrated experience preparing authentic Mediterranean and Middle Eastern meat dishes.
Strong knowledge of meat cuts, marinating techniques, grilling, roasting, braising, and other specialized cooking methods.
Proven ability to supervise and train kitchen staff.
Knowledge of food safety regulations, sanitation standards, and inventory management.
Ability to work efficiently in a fast-paced kitchen environment.
