Midosuji is an intimate nouvelle omakase experience inspired by the cultural kinship between Osaka and Chicago, two sister cities that share a spirit of innovation, resilience, and artistry. Named after Osakas iconic ginkgo tree-lined boulevard, the restaurant channels the unique connection with Midosuji Street and its Chicago counterpart, the Magnificent Mile, through a design and dining philosophy that bridges heritage and modernity.
The RoleWorking closely with the Executive Chef and kitchen leadership team, the Sushi Chef is responsible for executing dishes with consistency, precision, and care. This role plays a key part in maintaining kitchen standards, supporting service flow, and contributing to a clean, organized, and high-performing BOH team.
What Youll Do- Prepare and execute menu items according to standardized recipes and specifications
- Set up, stock, and maintain assigned stations for service
- Safely operate and maintain kitchen equipment
- Maintain cleanliness and organization of workstations, following all sanitation and food safety standards
- Follow proper food storage procedures, including FIFO, labeling, and rotation
- Assist with prep and production as needed to support service
- Maintain a strong sense of urgency to ensure smooth and timely service
- Accurately execute dishes while adhering to allergy and dietary restrictions
- Complete opening, mid-shift, and closing duties in a timely and thorough manner
- Communicate clearly with kitchen leadership regarding inventory, equipment needs, and safety concerns
- Support teammates across the kitchen to ensure overall team success
- Prior experience in a professional kitchen preferred
- Basic knowledge of cooking techniques, knife skills, and kitchen equipment
- Able to work efficiently in a fast-paced, high-volume environment
- Strong attention to detail and commitment to consistency
- Team-oriented with a positive and collaborative mindset
- Open to feedback and committed to continuous improvement
- Maintain all required health and sanitation certifications

Physical Requirements- Lift and move up to 25 pounds frequently and up to 50 pounds occasionally
- Safely and effectively use all necessary kitchen tools, equipment, and cleaning chemicals
- Stand and walk for an entire shift, including moving safely through all areas of the kitchen
- Ability to work in hot, cold, and fast-paced environments
Compensation: Hourly ($26.00 - $28.00)
