Finn & Fire is having a JOB FAIR (June 4th, Thursday. From 10am - 1pm) in 111 N. Pitt Street Old Town Alexandria, VA 22314 and is seeking skilled Line cooks to join our opening culinary team. This role is for cooks who take pride in clean execution, disciplined prep, organized stations, and the repetition required to produce high-level food consistently.

We are seeking dynamic, experienced Back of House Staff (Cooks, Line Cooks, Prep Cooks, Sushi Chef & Dishwashers) to join our team as we create an elevated dining experience. Ideal candidates will have a strong background in fine dining service & a passion for delivering exceptional hospitality.

Our kitchen brings together pristine seafood, Nikkei technique, live-fire cooking, premium meats, bold Peruvian flavors, and the polished energy of a modern steakhouse. We are looking for cooks who are serious about craft, focused during service, and excited to help build the culinary standard of a new restaurant from day one.

Key Responsibilities

Execute assigned station duties according to Finn & Fire standards during prep and service.

Prepare, portion, season, cook, and plate dishes with consistency, precision, and attention to detail.

Work across a menu rooted in Peruvian Nikkei cuisine, including seafood, crudo-style preparations, composed dishes, live-fire cooking, premium meats, vegetables, sauces, and bold, balanced flavors.

Maintain strong mise en place, station organization, cleanliness, labeling, storage, and readiness before and during service.

Handle ingredients with care, including seafood, meats, produce, herbs, sauces, marinades, garnishes, and specialty pantry items.

Support a culinary program that balances classic preparations with modernized interpretations and a clear point of view.

Work confidently with flavor profiles that may include citrus, aji, leche de tigre, soy, sesame, herbs, spice, smoke, char, acidity, and umami-driven sauces.

Execute cooking techniques with discipline, including grilling, searing, roasting, sauteing, frying, blanching, marinating, curing, saucing, and finishing.

Maintain proper food safety, sanitation, temperature control, cooling, storage, and cross-contamination standards.

Monitor freshness, pars, prep levels, waste, and product quality.

Communicate clearly with chefs, sous chefs, fellow cooks, porters, and the service team.

Receive direction professionally and make corrections quickly.

Move with urgency while staying calm, clean, and focused during high-volume service.

Contribute to a disciplined, respectful, focused, and professional opening-team culture.

Qualifications

Previous experience as a Cook, Line Cook, Prep Cook, Grill Cook, Garde Manger Cook, or similar role in a serious restaurant environment.

Strong knife skills, clean prep habits, and understanding of station organization.

Ability to follow recipes, prep lists, plating guides, chef direction, and service standards with consistency.

Experience with seafood, meat cookery, live-fire cooking, raw or chilled preparations, sauces, vegetables, or composed plates preferred.

Understanding of proper food handling, sanitation, storage, labeling, and temperature-control standards.

Ability to work cleanly, quickly, and consistently under pressure.

Strong attention to detail, repetition, refinement, and presentation.

Professional attitude, punctuality, humility, and team-first mentality.

Experience in Peruvian, Japanese, Nikkei, seafood, steakhouse, tasting menu, fine dining, hotel, or high-standard restaurant environments preferred.

Curious intelligence, coachability, and genuine interest in the craft are required.

Compensation

Competitive hourly rate based on experience.

Schedule

Full-time and part-time positions available. Evening, weekend, and holiday availability required.

About Finn & Fire

Finn & Fire is a new Peruvian Nikkei restaurant in Alexandria with a strong seafood focus, live-fire influence, premium meats, and a polished steakhouse sensibility. The restaurant is being built with high standards, sharp execution, and a clear culinary point of view.

As part of the opening team, this role will help define the restaurants culinary pace, discipline, consistency, culture, and identity from day one.
