We are excited to announce the opening of a new, Cantina-themed Bar and Restaurant, inside the Thompson and Tommie Austin, two premier lifestyle hotels in Downtown Austin This new concept will open in early Spring to include 17,000 square feet of indoor and outdoor dining and lounge space, multiple venues for private events and the pool deck servicing hotel guests and Residents.
The Role
The Chef de Cuisine will lead the restaurant kitchen and team members through a successful pre-opening of the restaurant in Spring 2024. The goal of the Chef de Cuisine is to manage the department and work with the Corporate liaison to create, implement, and maintain quality standards. The ideal Chef de Cuisine will accomplish their tasks by monitoring the daily functions of the culinary restaurant department, including providing support and guidance to the culinary team to end in a positive guest experience.
Responsibilities include\:
Support senior leadership and Hyatt's Internal RB&E Restaurant Group by developing and assuming basic management responsibilities.
Supervise the preparation and cooking of various food items.
Develop and implement creative menu items that adhere to Hyatt brand standards.
Plan, coordinate & implement special events and holiday functions.
Manage hourly kitchen employees through scheduling, payroll, training, coaching, evaluating and hiring.
May manage other key culinary leadership rolls including supervisor and other less senior Sous Chefs.
Lead and coach the team towards achieving exceptional guest service and employee satisfaction results.
Monitor food production, ordering, cost, and quality and consistency on a daily basis.
Ensure proper safety and sanitation of all kitchen facilities and equipment.

Both hotels are anchored on the ground floor by our re-imagined cantina-themed restaurant, a 13,000 sq ft. indoor and outdoor oasis as well as The Diner Bar + The Grey Market, a street-side concept serving daily fare for locals, residents, and guests alike and helmed by award-winning Chef Mashama Bailey. This mixed-use project will also feature a residential tower Siena and 10,000 square feet of retail space and a 7,000 sq. ft. state of the art fitness center and simulator room, appropriately named the T Box.

Qualifications - External
In-depth skills and knowledge of all kitchen operations
Possess strong leadership, communication, organization and relationship skills
Experience with training, basic financial management and customer service
Proficient in general computer knowledge
A true desire to exceed guest expectations in a fast paced customer service environment
Capable of producing a consistent product in a timely manner
Strong training and communication skills
Culinary education and/or on the job training, independent restaurant experience is preferred
Geographic and schedule flexibility preferred
