THE JOB:

As Executive Sous Chef in Salt & Ivy , you will partner with the Executive Room Chef to provide direction and leadership to the kitchen team, ensuring a seamless operation that aligns with the MGM brand. From crafting innovative menu offerings to maintaining impeccable quality and service standards, you will play a key role in driving the restaurants success. In addition to your primary responsibilities within Salt & Ivy, this role will also support and collaborate with other outlets across the property as needed, contributing to overall culinary excellence and operational consistency.

THE SCHEDULE:

  • Swing Shift | 3pm (earliest) 1am (latest) | 10 hour shifts

  • Off: Monday & Tuesday

  • Will be utilized to assist in other outlets based on the business needs, so you must be open and flexible to work varied shifts, including grave shift, weekends, and holidays

  • Salt & Ivy Restaurant Overview

THE DAY-TO-DAY:

  • Oversee daily kitchen operations, including scheduling, inventory management, and labor productivity.

  • Execute the restaurants business plan while developing strategies to meet operational and financial goals.

  • Maintain high standards of health, sanitation, and cleanliness throughout the kitchen.

  • Implement policies, training programs, and operational procedures to ensure consistency and excellence.

  • Engage with guests to ensure an exceptional dining experience, addressing any concerns proactively.

  • Work closely with the service team to guarantee seamless coordination between the kitchen and dining room.

  • Lead, train, and mentor a diverse team, fostering a culture of teamwork, recognition, and professional growth.

THE IDEAL CANDIDATE:

  • Bachelors degree or equivalent culinary experience.

  • 2+ years of experience in a high-volume and/or upscale casual dining environment preferred.

  • Background in high-volume restaurants, luxury dining, or fine-dining establishments preferred.

  • Experience managing employees under a collective bargaining agreement.

  • Proficient using Microsoft Office programs such as Word, Excel, Outlook, and basic office equipment.
