About Us
Noa, a well-loved NYC cafe, is expanding with the opening of Noa a Bakery, a small dedicated artisan bread and pastry space. Were passionate about laminated pastries, sourdough breads, and seasonal baked goods, and were looking for an experienced, hands-on Head Baker to lead production and help shape the future of our new bakery.

About the Role
The Head Baker will oversee all bakery production with a focus on laminated doughs, sourdough bread, and specialty pastries. This is a rare opportunity to join at launch and play a key role in setting up systems, refining recipes, and building a bakery team from the ground up.

This is a full-time position requiring early mornings, precision, and a love for the craft.

Responsibilities

  • Lead all bread and pastry production, including:

    • Laminated doughs (croissants, danishes, etc.)

    • Sourdough bread mixing, shaping, proofing, and baking

    • Seasonal and specialty pastry items

  • Manage bakery schedules and oversee daily prep and bake timelines

  • Train, mentor, and develop the bakery team to maintain quality and efficiency

  • Ensure compliance with NYC Department of Health standards

  • Maintain consistent quality control across all products

  • Manage inventory, ordering, and vendor relationships for bakery ingredients

  • Monitor and control food waste and production costs

  • Keep the bakery organized, clean, and operating smoothly

Requirements

  • 4+ years of professional baking experience, including laminated doughs and sourdough

  • Prior leadership or head baker role in a high-quality bakery

  • Strong technical knowledge of fermentation, proofing, and baking techniques

  • Ability to work early morning shifts, weekends, and holidays as needed

  • Excellent organizational and time management skills

  • Familiarity with NYC DOH health code standards

Schedule & Compensation

  • Full-time (average 4045 hours/week)

  • Early mornings (approx. 5:00 AM start)

  • Hourly pay range: $22$28/hour , based on experience and skill level

Compensation Details

Compensation: Hourly ($22.00 - $28.00)
