Sous Chef

Oversees daily kitchen operations, supporting the Executive Chef and leading the sous chef team to ensure seamless food preparation and service. This role supervises kitchen staff, maintains the quality and consistency of dishes, enforces health and safety standards, and coordinates inventory and ordering.

Job Responsibilities
  • Supervise production staff in accordance with departmental and hospital policies and procedures.
  • Ensure high-quality food production and service, maintaining excellent sanitation in compliance with departmental standards.
  • Collaborate with key stakeholders (e.g., Retail Manager, Executive Chef) to assist in production planning and waste reduction.
  • Manage daily, weekly, and/or monthly reports; assist with cost-reduction programs.
  • Research new techniques and stay updated on industry trends.
  • Lead and mentor team members, ensuring they have the resources required to complete assigned tasks.
  • Perform other duties as assigned to meet departmental and institutional goals.
  • Maintain regular and predictable attendance.

Minimum Education and Training

  • Required: High School diploma or GED.
  • Preferred: Associate's degree in Culinary Arts from a recognized Culinary School.

Minimum Experience

  • 3+ years of relevant experience.
  • Experience implementing and monitoring food service policies, procedures, and programs.
  • Proven ability to supervise teams, manage resources, and meet timelines.
  • Strong understanding of food service regulations, laws, and standards.
  • Demonstrated performance in previous roles.

Licensure, Registration, and Certification

  • Required by St. Jude:
    • Certified Sous Chef (CSC) from the American Culinary Federation within one year of employment if no Associate's degree in Culinary Arts.
    • ServSafe Food Protection Manager or ANSI-approved equivalent within 6 months of hire.

Physical Demands and Working Conditions

  • Regularly required to stand, walk, use hands, reach, talk, and hear.
  • Frequently required to sit, climb, balance, stoop, kneel, crouch, crawl, and taste or smell.
  • Occasionally lift and/or move up to 35 pounds.
  • Specific vision requirements include close vision, color distinction, and focus adjustment.
  • Occasionally exposed to toxic or caustic chemicals.
  • Moderate noise level environment.
  • Must comply with all applicable federal, state, and local safety and health regulations.

Compensation
In recognition of certain U.S. state and municipal pay transparency laws, St. Jude is including a reasonable estimate of the compensation range for this role. This is an estimate offered in good faith and a specific salary offer takes into account factors that are considered in making compensation decisions including but not limited to skill sets, experience and training, licensure and certifications, and other business and organizational needs. It is not typical for an individual to be hired at or near the top of the salary range and compensation decisions are dependent on the facts and circumstances of each case. A reasonable estimate of the current salary range is $21.00 - $35.50 per hour for the role of Sous Chef.
