THE JOB:

The Specialty Sous Chef will be responsible for ensuring the smooth execution of dinner service within the kitchen. This role supports ongoing preparation and leads the team during service, ensuring quality, timing, and coordination across all stations. The candidate will set the stage for the guest experience with your welcoming smile and service. By understanding their unique stories and needs, the Sous Chef will own their experience to create WOW memories that will carry with them far and beyond their stay with us.

THE DAY-TO-DAY:

  • Supervise Line Cooks and Culinary Utility staff, overseeing all Indian kitchen stations during dinner service to ensure consistent execution, flavor accuracy, and timely plating.

  • Lead the tandoor and bread stations, preparing meats, seafood, and traditional breads like naan and roti to order using authentic techniques.

  • Ensure curry bases such as makhani, korma, bhuna, and chettinad are properly finished, seasoned, and plated.

  • Act as the main liaison with front-of-house, managing ticket flow, responding to service notes, and maintaining high standards in timing, temperature, and presentation.

  • Monitor daily food needs, requisition supplies, and assist in special event execution featuring ceremonial or festive Indian dishes.

  • Support training, staffing, and performance management of the culinary team, recommend equipment repairs, and resolve guest concerns within scope while maintaining a smooth and collaborative kitchen operation.

THE IDEAL CANDIDATE:

  • The ideal candidate holds a high school diploma or GED and has at least two years of hands-on experience in authentic Indian cuisine, with a strong understanding of regional traditions, techniques, and culinary authenticity.

  • They have formal culinary training through a certificate, diploma, or degree from a recognized Indian culinary institute, with both practical and theoretical knowledge of regional Indian cuisines.

  • Flexible and reliable, they are available to work varied shifts, including weekends and holidays, and bring a deep passion for Indian gastronomy and professional kitchen standards.
