SUMMARY
The purpose of this position is to accurately and efficiently prepare all Dahl Restaurant Group menu items,as well as prepare and portion food products prior to in accordance with DRG recipes and guidelines. Line cooks are responsible for positive team interactions while maintaining a clean and safe kitchen and assist team members when necessary.
Essential Job Duties and Responsibilities:
Able to multitask in a fast-paced environment.
Must be able to keep up with periods of high volume orders
Acts as a true team member and recognizes areas to be helpful and supportive to other staff members.
Maintain complete knowledge of all menu items.
Prepares a variety of products such as meat, seafood, poultry, vegetables and other food items for cooking in ovens, grills, saute burners and a variety of other kitchen equipment.
Assumes 100% responsibility for quality of products served.
Knows and complies consistently with our standard portion sizes, cooking methods, quality standards and kitchen rules, policies and procedures.
Stocks and maintains sufficient levels of food products at line stations to assure a smooth service period.
Portions food products prior to cooking according to standard portion sizes and recipe specifications.
Maintains a clean and sanitary Workstation area including tables, shelves, grills, pasta cookers, saute burners, deck ovens and refrigeration equipment.
Prepares items for grilling, sauteing or other cooking methods by portioning, chopping, dicing, blending, seasoning and/or marinating.
Follows proper plate presentation and garnish set up for all dishes.
Handles, stores and rotates all products properly.
Assists in food prep assignments during off-peak periods as needed.
Closes the kitchen properly and follows the closing checklist for kitchen
stations. Assists others in closing the kitchen.
Food handler certification within the county of employment.
Able to work on feet for long hours.
Ability to lift up to 50 lbs.
Filling in for absent staff as needed.
Adhere to grooming and appearance standards consistently. Knowledge, Skills, and Abilities:
Must have 2+ year high-volume restaurant experience
Should have excellent communication skills
Can stand for long periods of time, and are able to lift up to 25 pounds.
Must be able to read and under recipes and quantities
Prepare food from scratch by following our recipes to produce consistent results
Cook a variety of meats, seafood, poultry, vegetables, and other food items using broilers, ovens, grills, fryers and other kitchen equipment
Follow all food safety and sanitation standards.
Possess a Yavapai County Food Health Safety Card
Availability to work weekends and some holidays
