Foundational / Pre-Opening Opportunity

Austin Oyster Co. is looking for a driven, detail-oriented, and creative Chef de Cuisine to lead our kitchen and help bring our new restaurant to life. This is a foundational, hands-on role for someone excited to build something from the ground up- someone who leads with both precision and heart, and who's passionate about mentorship, culture, and craft.

You'll work with ownership to shape the restaurant's culinary identity, build systems that support consistency and excellence, and develop a team rooted in collaboration and accountability.

We are seeking candidates open to a start date in late October to early November.

What You ll Do:

  • Oversee all kitchen operations and lead the BOH team through daily service.

  • Hire, train, and develop a tightknit and high performing kitchen crew.

  • Collaborate on menu development, systems, and kitchen design.

  • Maintain high standards of cleanliness, execution, and consistency.

  • Manage food and labor costs, vendor relationships, inventory, and compliance.

  • Set the tone, on the line and off: for professionalism, respect, and a strong kitchen culture.

You Might Be a Great Fit If You:

  • Have 5+ years in a senior leadership role (CDC or Exec Sous) in a respected, quality-driven kitchen.

  • Are passionate about seasonal cooking, thoughtful technique, and precise execution.

  • Care deeply about mentorship and building a team that grows together.

  • Are comfortable in the details and being on the line for your results when it comes to costing, scheduling, and systems.

  • Can communicate clearly, calmly, and consistently- even under pressure.

  • Have the desire to build something meaningful and lasting.
