QualificationsSYNOPSIS OF DUTIES
- Plans and prepares dessert items for the Hunters Club, Feast of the Rock, banquets and special functions, and the Employee Cafeteria.
- Develops new recipes.
- Provides work direction to the Pastry Cook.
- Shares culinary knowledge, including preparation techniques, with culinary staff members while maintaining confidentiality of proprietary recipes and other information not meant for dissemination.
- Participates with all members of the culinary staff in the maintenance of food costs at established levels by following recipes, standards of portion control, and waste reduction.
- Maintains complete and accurate records, as prescribed by the Executive Chef.
- Assists kitchen management in the maintenance of a safe and sanitary workplace.
- Assists in general food production activities, as business needs require.
- Complies with department rules, policies, and procedures.
- May be required to assist in other departments when necessary or for training.
- Maintaining Title 31 Compliance accurately.
- Other duties as assigned.
General: Must be age 21 or older. Must qualify for Tribal Non-Gaming License.
Education: High School diploma or GED preferred but not required. Must have completed a post-secondary culinary arts training program or present evidence of equivalent work experience. Must be able to communicate in the primary language used in the workplace.
Experience: Requires a minimum of 5 years’ experience in the pastry department.
Physical: Must be able to stand and exert well-paced mobility for periods up to four (4) hours in length. Must have the ability to lift pots, pans, and other items up to 50 pounds in weight. Requires normal vision, including color acuity and depth perception, reaching, bending, stooping, grasping, finger dexterity and hand/eye coordination. Must be able to perform safely and effectively in conditions of wet floors and temperature extremes.
