PURPOSE
Responsible for providing and producing the highest quality preparation of the Vista dessert menu items in a timely, efficient, and consistent manner. Practice proper handling/storage of all food items in accordance with Vista Standards, Casino & Hotel Policies, Indian Sanitation and Health Regulations. Maintain a favorable working relationship with fellow Team Members that fosters and promotes a cooperative and harmonious work environment.

ESSENTIAL DUTIES / RESPONSIBILITIES
- Responsible for quality, quantity and timeliness of daily bread production, seasonal dessert items, ice creams and sorbets.
- To include, but not limited to, cakes, cookies, sauces, pastry cream, caramels, custards, and creams.
- Responsible for following recipes, times and temperatures in order to produce high quality and consistent products.
- Ensure a quality-plated food presentation, portioning according to recipe standards, proper garnishes and substitution procedures are followed consistently.
- Continuous communication with the Chef de Cuisine and Executive Pastry Chef regarding dessert planning and production, inventory and ongoing tasks.
- Implement all F&B procedures for food storage, rotation, spoilage, sanitation and prevention of cross-contamination.
- Responsible for conforming to all Indian Health Services standards.
- Other duties and responsibilities as assigned.
Education and Experience :
- High School Diploma / GED; Recognized Equivalent of a High School Diploma (RED) or Foreign High School Diploma (FHD).
- Two (2) years as a Professional Baker.
- Internal candidates may substitute 696 hours Crossover Training, plus base minimum 2,080 hours - in lieu of the required two years experience.
- Familiarity with baking methodologies, terminology and techniques.
- Any combination of education and experience that clearly demonstrates the ability to perform the job duties of the position.
PREFERRED
Education and Experience:
- Minimum 2 years baking experience in a fine dining setting
- Minimum 1-year baking experience in high volume production
Snoqualmie Casino & Hotel exercises Snoqualmie Tribal Member/Native American preference in hiring, in compliance with the Snoqualmie Tribal Employment Rights Ordinance (TERO). You must obtain and maintain a Gaming License from the Snoqualmie Gaming Commission. Pre-employment drug testing is required for all positions. The use of marijuana will not disqualify an applicant for positions in any department other than Transportation (Valet, Driver I). DOT panel testing is required for the Driver position.
