Lottie & Zula s is a busy sandwich shop that serves breakfast and lunch seven days a week from 9am-7pm. We are a detail oriented, quality focused and technique driven, small team of cooks making the best traditional sandwiches using classic and modern techniques. We are a from scratch kitchen and do the majority of our protein prep and production in house. While we are making sandwiches, and try to be humble about what we do, this is not a typical deli gig and we are looking for teammates that want to make exceptional food and hone their culinary skills and techniques while upholding the highest standards.
This position requires all candidates to have prior experience in a busy kitchen, good knife skills, a solid grasp on food safety and health department standards, strongmunication skills, the ability to multitask, work as a member of a team and always maintain a clean and orderly kitchen and workspace.
We run a two person line, Hot Side and Cold Side with a third person available for the busiest times of the week to assist in wrapping and expediting. You will be expected to be able to run the line solo during slow service times while other team members prep.
Duties & expectations include:
Maintaining a daily, personal prep & todo list
Setting up, & breaking down the line.
Stocking of and maintaining counts on mis en place pertaining to your station.
Multitasking the production of multiple sandwiches at a time in coordination with other team members on the line and in the front of house.
Mastery of both sides of the line, as well as prep and food production procedures
Prep projects such as making sauces and spreads, slicing meats and cheeses on a deli slicer, prepping raw vegetables, protien production and lactofermentation.
Ensuring all food products are properly labeled and dated, stored in the correct containers in their correct locations at the proper temperatures as dictated by county health code standards.
Creating prep lists and purveyor orders, ensuring that your station has the necessary product for service, and the prep team has the necessary items to maintain stock of that product.
Dishes, cleaning projects. (We do not have a dedicated human dishwasher, the entire team contributes to maintaining the dish-pit and ensuring that clean items are returned to their dedicated homes.
Checking in, quality control, properly rotating and storing of orders from purveyors.
We have a really great team , we re all focused on putting out the best quality sandwiches we can and always working to improve our food, our processes, and the overall guest experience. We work in an open kitchen, bump loud music and generally try and have as good of a time as we can while providing the best quality and service as a cohesive team, always striving to set each other up for success.
We re also a very fast paced kitchen, time management, prep list management and inventory management as well as strongmunication skills and an equal willingness to ask for help, and offer help are keys to operating in this environment while having a good time and not getting overwhelmed by the pace and volume.
Our standards and expectations are high. The right candidate will those qualities. We have spent years building systems, recipes and strict standards, we expect all employees to learn, uphold and ad to those standards and procedures before contributing creatively to the menu.
We are offeringpetitive hourly pay based on experience plus an equal of tips divided among the entire FOH and BOH team based on hours worked.
