Naskila Casino is seeking a talented and experienced Executive Chef to lead our Team. Under the direction of the Director of Food & Beverage Operations, the Executive Chef is responsible for creating and implementing successful menu options for Naskila's Food & Beverage outlets and overseeing the operational and administrative tasks of the department.

Supervisory Scope

This position directly supervises the Executive Sous Chef, as well as the Food & Beverage back of house team.

Essential Job Duties/Responsibilities

  • Leads the Food & Beverage team in a fair, consistent, and level-headed manner.
  • Creates and prepares menu items, including refining and developing recipes.
  • Inspires others with a clear vision and gets others excited about being a part of that vision.
  • Maintains a level of enthusiasm that encourages others to participate to their fullest potential.
  • Makes sure that Team Members are properly trained and equipped to perform their jobs.
  • Coaches Team Members appropriately when needed using proper tools to help Team Members meet all performance standards and where appropriate to advance.
  • Ensures that worthwhile educational and training opportunities are made available to Food & Beverage team members to improve team effectiveness, awareness, and performance.
  • Coordinates with F&B Front of House team and Finance teams to ensure that inventory levels are accurately tracked and maintained.
  • Ensure that supplies, products, and equipment are ordered and tracked in a cost-effective and efficient manner.
  • Analyzes business volumes, trends, and adjusts operational activities accordingly.
  • Develops annual budgets and manages departmental staffing and spending levels in an effort to exceed approved budgets.
  • Responsible for cleanliness and organization of work areas including compliance with all local health codes. Ensure proper food handling of all food products, supplies, and equipment.
  • Ensures that staffing levels and schedules are consistent with business levels, and that adjustments occur as business levels change.
  • Ensures that effective and constructive coordination and communication occurs, both within the department and with team members outside of the department.
  • All other duties as assigned.

Requirements

Education and Experience

  • Minimum of seven (7) years of experience in a full-service kitchen.
  • Minimum of five (5) years of management experience as a chef in a full-services restaurant or hotel.
  • Certified in ServSafe Sanitation Manager level.

Skills and Abilities

  • Ability to communicate with Team Members, management, and guests in a clear, business-like, and respectful manner that focuses on generating a positive, enthusiastic, and cooperative work environment.
  • Exceptional attention to detail.
  • Working knowledge of mother and minor sauces.
  • Working knowledge of proper butchering techniques.
  • Working knowledge of specialized culinary equipment used at the property.
  • Advanced knife skills.
  • Ability to adjust preparations for flavor and accommodate guests' needs in a timely manner.
  • Responsible for maintaining adequate training programs for kitchen personnel.
  • Ability to discern and evaluate the condition or quality of food products through visual inspections, taste, touch, and smell.
  • Excellent management and organizational skills.
  • Ability to work well in a team-oriented, fast-paced, gaming environment.
  • Ability to fully understand financial statements and POS cash/credit transactions, cash reconciliation and product inventory.
  • Proficient in computer programs, such as Word, Excel, Outlook, and Power Point.
  • Ability to navigate the Naskila Casino ordering, inventory, labor, and training programs, such as: ADP, LMS, Red Rock, InfoGenesis, and Agilisys.
  • Current knowledge of applicable safety guidelines, including environmental codes.

Preferred

  • Experience with start-up restaurants, construction, and opening experience.
  • Previous experience in a gaming hospitality environment.
  • Associate's or Bachelor's degree in culinary arts, or CEC certification from an accredited institution.
