POSITION SUMMARY : Responsible for performing or supervising all preparation of menu items in Storytellers.
ESSENTIAL DUTIES:
- Prepare and supervise preparation of all food items, seasoning, finishing, and garnishing according to CCCH recipes, specifications, and standards.
- Recommend menu items and production procedures within budget guidelines.
- Assist Executive Chef in reviewing, staff planning and schedules, events planning, menu planning, labor and food costs, and staff concerns.
- Monitor, facilitate, and participate in all compliance and safety training to ensure adherence with all CCCH policies and procedures, and governing agencies regulations related to food safety, storage, preparation, and facilities cleanliness.
- Review and analyze inventory of supplies and equipment and recommend or approve purchases to replace, restock or improve food offerings and kitchen preparedness.
- Assists with supervising and training all line production staff.
- Coordinate and direct back of house food production to ensure efficient operations.
- Ensure clean and sanitary food production and kitchen work areas in accordance with HAACP regulations as well as Tribal health inspection requirements.
- Perform other duties as assigned.
Opportunities for Internships, Apprenticeships, and Coordinated Work Study programs may be available in lieu of formal education and work experience requirements for this position for enrolled members of the Yavapai-Apache Nation.
Education:- High School diploma or equivalent, required.
- Culinary degree, or equivalent work experience, required.
- Minimum 1 years experience as Sous Chef in a fine dining establishment.
- Strong organizational and interpersonal skills.
- Able to read, write, speak, understand the English language fluently.
- Knowledge of flavor profiles, seasonings, spices, and food pairings.
- Able to create recipes and design meal options for menu design.
- Computer literate with Microsoft Office.
- Have or be able to obtain food safety certification upon hire.
- Be at least 18 years of age.
- Participate and pass pre-employment drug screening and background investigation to obtain and maintain a valid Gaming License.
- Able to communicate and interact with Guests, fellow Team Members, and Management in a professional and courteous manner.
- Available to work all shifts, weekends, and holidays as deemed necessary.
- Able to comply with all Cliff Castle Casino Hotel policies and procedures.
