JobSummary:
The SousChef supports the Executive Chef in the day-to-day operations of thekitchen at Olivine Rooftop , ensuring the consistent execution of theSouthern-Italian fusion menu. This position provides hands-on leadership tokitchen staff, oversees station operations, and ensures that all dishes meetOlivines standards for quality and presentation. The Sous Chef will workclosely with the Executive Chef and the broader team to create exceptionaldining experiences, optimize kitchen performance which contributes to therestaurants overall profitability and success.
KeyResponsibilities:
- Assist the Executive Chef in the management of daily kitchen operations, ensuring smooth service during all meal periods.
- Supervise kitchen stations, ensuring food is prepared and presented according to Olivines high standards.
- Ensure consistency in food quality and presentation for each service, maintaining the Southern-Italian fusion concept.
- Supervise and guide kitchen staff, providing training on recipes, techniques, and safety standards.
- Assist with onboarding and training new team members, fostering a collaborative environment.
- Monitor staff performance, offering constructive feedback and coaching to improve skills and efficiency.
- Assist in managing inventory and ordering supplies to ensure the kitchen runs efficiently.
- Help control food and labor costs, maintaining profitability while ensuring high quality and consistency.
- Assist in implementing waste reduction strategies and managing kitchen resources effectively.
- Assist in the preparation of new menu items, special events, and seasonal dishes in collaboration with the Executive Chef.
- Help adjust the menu based on guest feedback, ensuring continuous improvement in food offerings.
- Ensure that all dishes are served in a timely manner, maintaining quality and presentation standards.
- Ensure the kitchen operates in compliance with local, state, and federal health, safety, and sanitation regulations.
- Monitor kitchen cleanliness and organization, ensuring it meets Olivines standards for safety and efficiency.
ProfessionalExperience:
- 3+ years of experience as a Sous Chef, Junior Sous Chef, or a similar position in an upscale dining environment.
- Experience in elevated Italian cuisines or high-end restaurants with a focus on seasonal ingredients and contemporary techniques.
- Demonstrated ability to manage kitchen operations , supervise staff, and support menu execution in a high-pressure environment.

- Strong knowledge of Italian cooking techniques, Southern cuisines, and modern culinary trends.
- Leadership and team-building skills, with a focus on training and developing kitchen staff.
