POSITION DESCRIPTION:
This position will be responsible for completing the daily preparation of food products and cook items to-order as per company specifications. Will be instrumental in new menu creation / rollout, costing of menu items, tracking labor and food costs, and oversight of culinary production. Ensures consistently great food is prepared correctly, presented appropriately and served quickly in order to enhance the vacation experience of our guests and owners.

ESSENTIAL DUTIES AND TASKS:

  • Train junior members of the team
  • Drive creative menu enhancements, to include costing of new item options
  • Assist management team with tracking of food and labor cost
  • Read food order slips or receive manual verbal instructions as to food required by patrons and prepare and cook food according to instructions and recipes, working on several different orders simultaneously. Prepare specialty foods following specific methods that usually require short preparation time. Verify that prepared food meets requirements for quality and quantity.
  • Wash, cut, and prepare foods designated for cooking; clean, stock, and restock workstations.
  • Maintain sanitation, health, and safety standards in work areas; clean food preparation areas, cooking surfaces, and utensils.
  • Operate large volume cooking equipment such as grills, deep-fat fryers, griddles, etc.
  • Schedule activities and equipment use with managers, using information about daily menus to help coordinate cooking times

EDUCATION and/or EXPERIENCE

  • High School Diploma or GED equivalent
  • Five year of cooking experience, or an equivalent combination of training, education and experience.

CERTIFICATES, LICENSES, REGISTRATIONS

  • Any certificates are a plus

QUALIFICATIONS

  • Ability to follow prescribed procedures and guidelines in accomplishing tasks as described above
  • Previous experience with tracking labor and food cost
  • Previous experience in new menu creation
  • Experience training junior cooks
  • Ability to be self-directed
  • General knowledge of kitchen equipment required.
  • Ability to work in a high-pressure environment
