The Cook II is an intermediate level cook who seeks to further develop their culinary skills and take on more responsibility. You will contribute to the preparation, cooking, and presentation of diverse menu offerings, working closely with senior kitchen staff, ensuring that our high standards of food quality, sanitation, and guest satisfaction are consistently met.

Essential Job Responsibilities:

  • Independent preparation of ingredients, including washing, peeling, cutting, and measuring that meet business volume demands.
  • Follow recipes and directions to cook and assemble dishes as instructed, following measurements and portion sizes to maintain ideal food costs and minimize waste.
  • Confidently run an assigned food station with the ability to help with training of beginner level cooks.
  • Maintain cleanliness and organization of the kitchen, including workstations, equipment, and storage areas to comply with New Mexico Environmental Department regulations.
  • Participate in weekly, monthly, and beginning or end of season deep cleaning tasks.
  • Monitor stock levels and report shortages or spoilage to leadership.
  • Ensure food is stored safely, adhering to food safety and sanitation guidelines.
  • Support the Culinary team in maintaining smooth and efficient operations during service hours through awareness and communication.
  • Set a good example in safety practices.
  • Learn and apply new cooking techniques and methods.
  • Follow checklists and other guidelines for opening and closing duties.
  • Follow waste stream guidelines related to garbage, recycling, and food composting. Transport full bins and replace with bins ready to use.
  • Assist in the execution of any Catering or other special events.
  • Reliable attendance on all scheduled workdays.
  • Other duties as assigned.

Qualifications/Knowledge:

  • Minimum 2 years cooking experience in a high-volume kitchen environment.
  • Must already have or be willing to obtain the New Mexico Food Handler Certificate upon hire.
  • Working knowledge of the fundamentals of cooking and cooking procedures.
  • Ability to read and employ math skills to follow recipes.
  • Ability to communicate in a positive and productive manner while performing duties.
  • Ability to work a flexible schedule including weekends, holidays, and evenings.

Work Environment:

Taos Ski Valley, Inc. is often a fast-paced work environment, especially during Holiday and Peak days. TSVI is located in a high-altitude alpine environment. Position may require travel on uneven, snow-packed, or icy terrain and may be exposed to wet, cold, and/or humid conditions. Must be able to work in close quarters and with other staff.

Physical Demands of Position Include:

Will often lift and carry up to 25 pounds and may team-lift up to 50 pounds. 90-100% of the time will be spent standing, walking, reaching, talking, hearing, tasting, and smelling. Occasionally sitting less than 15% of the time.

Background Check
