Job Description
LM Hotel Operations is looking for an meticulous Catering Prep Cook to join our team. A Catering Prep Cook is responsible for ensuring sanitation and safety in the kitchen and preparing quality items for service. You will be responsible for food preparation, proper cooking techniques, sanitation, and stocking. LM Catering and Events values their employees by providing a safe, constructive, and positive work environment.
What will I be doing?
As a Prep Cook, you would be responsible for performing the following tasks to the highest standards:
Set up, stock, and break down of prep station with necessary supplies.
Complete prep lists efficiently and accurately.
Follow recipes and directions to ensure consistency.
Regularly use knives and other kitchen tools safely.
Properly prepare and store food to maintain quality and freshness.
Perform portion control to minimize waste.
Understand kitchen equipment and machinery, including but not limited to flat top grills, fryers, and ovens.
Complete opening and closing side work tasks as assigned.
Sanitation
oMaintain cleanliness and hygiene standards that comply with state and local food safety and sanitation regulations.
oKeep kitchen equipment clean, including but not limited to the cooktop, fridges, walls, oven, fryer, dishwasher, vac-seal, and sous-vide.
oKeep a clean and organized food preparation station.
oClean and restock appropriate kitchen utensils.
oPerform other duties as assigned by chef.
What are the Requirements/Skills needed?
Ability to work cooperatively and efficiently in a team.
Aptitude for multitasking.
Establish a positive relationship with co-workers and managers through a solid work ethic, positive attitude, punctuality, and dependability.
Strong organizational skills and attention to detail.
Active listening skills.
Basic communication skills in English.
Follow recipes and directions of chef.
Ability to complete prep lists in a timely manner.
Properly prepare and store food.
Perform portion control to minimize waste.
Learn the full menu, including allergens in each menu item.
Ability to perform basic knife cuts.
Must understand food cooking temperatures.
Other Duties & Tasks
Must be able to stand for 8+ hours.
Ability to safely use sharp tools like knives on a regular basis.
Ability to lift up to 40 pounds regularly and 60 pounds on occasion.
Ability to walk, stand, kneel, reach, climb, balance, stoop, push, pull, lift, grasp, bend, twist, squat, and do repetitive motions regularly throughout shift.
Ability to safely use fire and hot cooking oil for cooking purposes.
Ability to carry heavy boxes.
Daily exposure to hot and cold temperatures, cleaning chemicals, as well as hot flames and cooking oils.
Ability to use sharp tools such as knifes for daily production.
Ability to work in a fast-paced environment.
Ability to stay calm under pressure.
Well-groomed and professional appearance.
What are the Qualifications?
2+ years Prep Cook experience in a Catering is preferred.
Food Handlers and Allergen certification with 30 days of employment.
Completion of vocational or culinary school (preferred).
Ability to work flexible schedule to include weekends and holidays.
