MAS is a small-format fine-dining restaurant offering a tasting menu inspired by the ingredients of the Pacific Northwest and Japanese technique. We're a small, dedicated team working at the intersection of craft and creativity and we're looking for a Sous Chef who s our values and vision.
About the Role
As Sous Chef at MAS, you'll be a key leader in our kitchen, responsible for supporting the execution of our nightly tasting menu and the overall flow of service. You'll collaborate directly with 3x James Beard Finalist, Chef Josh Dorcak, on menu development, prep systems, and sourcing, and will be expected to uphold the standards and philosophy that define our approach to food.
This is a hands-on role that requires leadership by example. You'll work the line during service, manage daily prep and ordering, oversee mise en place across stations, and help train and guide the rest of the team. You should be equally confident breaking down fish as you are managing pacing on a ten-course menu. Flexibility,anization, and attention to detail are critical.
At MAS, we serve just one tasting menu each night in an intimate setting, which allows us to create a deeply personal and detail-oriented experience for our guests. The Sous Chef will help shape that experience, ensuring that each dish and each service reflects ourmitment to quality, seasonality, and story.
The ideal candidate is grounded in technique but open to new ideas. You should thrive in a focused kitchen w creativity, flexibility, and curiosity drive the work. This is a unique opportunity to grow in a restaurant that's small in scale but serious in craft, with room for personal expression and creative input.
Qualifications
Minimum 5 years of fine-dining kitchen experience, including in a leadership or sous chef role
Strong technical foundation in cooking, plating, and prep systems
Knowledge of (or deep interest in) fermentation, preservation, and seasonality
Excellentmunication, time management, andanizational skills
A calm, solutions-oriented presence under pressure
Respect for ingredients, teammates, and the process
