About the Job:
The Demi Chef de partie at Mandarin Oriental Paris, performs and supervises the operational tasks and functions of the kitchen under the direction of the chefs, with the overall objective of preparing dishes within the given timeframe while respecting quality and food safety standards.
As a Demi Chef de partie you will be responsible for the following duties:
- Assist the Chef de Partie with daily tasks and oversee duties in their absence.
- Wash, peel, and prepare ingredients, ensuring mise en place meets quality and presentation standards.
- Follow technical sheets strictly, prepare and replenish buffets accurately and on time.
- Check daily ingredient inventory, avoid shortages, and store ingredients correctly with proper labeling.
- Maintain high hygiene standards, clean and sanitize workspaces and tools before and after use.
- Adhere to food safety regulations of Mandarin Oriental and local laws at all times.
- Cooperate with the team, assist other outlets when needed, and attend meetings and trainings.
- Ensure customer satisfaction according to Mandarin Oriental's Legendary Quality Experiences and service standards.
As Demi Chef de partie, We Expect from You:
- A passion for cooking and a strong ambition to grow within a luxury hotel kitchen environment.
- Previous experience in a similar role within a fine dining restaurant or upscale hotel kitchen is preferred.
- Excellent attention to detail and the ability to perform well under pressure in a fast-paced setting.
- Quickly learning and able to follow instructions from senior chefs with precision.
- Interpersonal skills.
- Fluent in French (both written and spoken).
- Solid knowledge of kitchen hygiene regulations and food safety standards.
- Positive attitude and a proactive, hands-on approach to responsibilities.
- Culinary diploma or equivalent professional qualification.
- Highly organized, methodical, and rigorous in your work.
- Enthusiastic, with a genuine interest in delivering excellence.
