We are looking for an experienced Pastry Chef to prepare a variety of desserts, pastries or other sweet goods. Your skill in baking high quality treats should be matched by your creativity to develop new amazing tastes and recipes. The ideal candidate will be well-versed in culinary arts with a passion for sweet and delicious creations. They must adhere to health and safety standards to provide clients with the best possible serving. The goal is to enhance customer satisfaction so that we can maintain and expand our clientele.


  • Responsible for the creation, decoration, and presentation of all desserts such as cakes, pastries, pies, and breads.
  • Under the Executive Chef’s direction, responsible for operating the pastry/bakery section of the kitchen while creating high quality items with standardized recipes and presentations.
  • Oversees the day to day operations and staff for the bakery.
  • Interview, train & assign work to the bakery team members.
  • Create and prepare all bakery items as required by traditional and modern recipes from scratch while ensuring quality throughout the bakery and pastry offerings.
  • Assist in production and maintenance of par stocks and inventory of bakery items with proper rotation while maintaining the highest cleanliness and hygiene standard.
  • Maintain the set budget for labor, food, equipment and all other costs associated.
  • Create new and exciting desserts to renew casino menus (buffet, banquets, AJ’s, Café, Paddock, PCC, etc.) to engage the interest of external and internal guests.
  • Maintain payroll, scheduling and all PMRC policies and procedures.
  • Monitor bakery inventory and make appropriate orders within budget.

Job Requirements:

Associates Degree in Baking/Pastry or Culinary Arts (additional experience may be substituted for education). 5 plus years’ experience working within the food industry as a Pastry Chef, Baker, or relevant role. Working knowledge of baking techniques and the pastry-making process. Creative ability with artistic skill in decorating cakes and other desserts. Excellent dietary, baking, managerial, and pastry skills essential. Must be able to communicate effectively, both verbally and in writing, with persons of diverse backgrounds. Knowledge of Iowa Department of Health regulations is required. Serv Safe and TIPs certification required. Skilled in menu development with budgeted food costs. Knowledge about plating & presentation. Knowledge of Word & Excel. Strong attention to detail & multi-tasking skills. Candidate must be able to assist in developing and maintaining a positive professional work environment. Ability to work in fast paced & high-pressure environment. Working knowledge of P&L statements. Knowledge of labor management & inventory control. Long periods of standing and walking. Subject to hot equipment, hot oil and sharp objects. Will have exposure to wet floors. Pushing of carts of dishes up to 150 pounds. Must be able to lift amounts up to 50 pounds.
