MITSUKOSHI USA, INC.
Mitsuksohi USA is the company that operates the Japan Pavilion at WDW at Epcot. Mitsuksoshi has been operating the pavilion since Epcot opened in 1982. Mitsukoshi has a long history that started in Japan in 1673. We are currently seeking Cooks of all different levels for our Epcot location.
ESSENTIAL FUNCTIONS OF COOK:
- Portion food by using food scale, plate and prepare (cut, peel, process, etc.) and/or cook foods (rice/noodles) for the current and the following day
- Keep kitchen organized by maintaining clean sanitary work areas
- Prepare and keep all support areas stocked with plates, utensils, napkins, condiments, appetizer sauces, ice, etc.
- Inspect all food items for freshness and bring questionable foods to the manager’s attention
- Proactively follows established food safety, sanitation and HACCP guidelines
- Follows company and state sanitation guidelines
- Contributes to the team by assisting other employees and to achieve company goals.
ESSENTIAL FUNCTIONS OF CULINARY ASSISTANT:
- Properly set up all work areas by balancing the preparations times of different orders to ensure guests get their meals in a timely manner, accommodate guest allergies and other special requirements.
- Keep the food production line organized by maintaining a clean, sanitary work area; including all equipment (ovens, fryers, grills etc.) and tools (knifes, ladles, etc.).
- Maintain production stock to meet operational needs.
- Maintain food quality by inspecting food items for freshness and to bring questionable items to the attention of management. Check all cooked/prepared items before releasing to be served to guest.
- Open/close the restaurant when chef or sous chef are not avialable.
OTHER FUNCTIONS OF COOK:
- Attends Food Safety workshops in order to keep up with certifications.
- Drive company vehicles to make deliveries.
- Assist in culinary section as needed
- Follows company handbook and procedures
- Perform other duties as required.
QUALIFICATIONS FOR COOK:
- High school diploma ore equvelent
- Entry Level position - 0-1 year
- Culinary assistant - 3-4 years
- Cooks - 2-3 years
