Job Summary:

Full Time Pastry Line Cooks could be working at our Pastry teams at the Central Bakery production kitchen or Grand Californian Hotel & Spa. Responsible for execution of all menu categories and specific recipes for all bakery menu items including timing, quality, temperature, portion, and presentation. Will also partner with Front of House to ensure Cast training/knowledge of product ensuring a smooth operation and delivery of exceptional bakery items.

The starting rate for a Pastry Line Cook is $17.60 per hour.

Pastry Line Cook will be eligible for our new starting rate of $18.10/hour effective 1/31/2019.

Responsibilities:

  • Formulates and prepares complex recipes including bakery/pastry recipes and high-end specialty desserts for banquets and fine-dining restaurants
  • Measures and mixes ingredients according to recipe, using variety of kitchen utensils and equipment to prepare desserts and sauces
  • Reads menu to estimate food requirements and procures it from storage
  • Observes and tests food being cooked by tasting, smelling, and piercing to determine that it is cooked
  • Cleans kitchen equipment and practices all HACCP procedures
  • Prepares including but not limited to batter, dough, mixes, specialty breads and brioche
  • Rolls out and portions dough on sheeter according to recipe
  • Validates shape and thickness of product is correct (i.e. Cookies, crusts, beignets)
  • Prepares assorted cakes, pastries and miscellaneous desserts
  • Prepares mixes, mousses, custard filling, cheesecake mix, and ganache
  • Utilizes a mixer, oven and utilizes the following equipment to decorate: Brush, Glaze Sprayer, Stencils
  • May assist Pastry Cook/Head Baker in preparing chocolate show pieces and sugar show pieces

    Basic Qualifications:

  • You must be at least 18 years of age to be considered for this role.
  • Experience in culinary field/high volume bakery 2 years
  • Ability to multi task and work in a very fast paced team environment
  • Demonstrates a desire to work in a guest service and team environment
  • Demonstrates passion and enthusiasm for working in the kitchen
  • Strong listening skills and ability to follow direction
  • Must be flexible to work a variety of shifts, including days, nights, weekends holidays and special events

Preferred Qualifications:

  • Culinary Education Degree or equivalent highly preferred
  • Fine Dining Pastry and Dessert Plating Experience
  • Recommendation from school
  • Food Safety Certification or equivalent
  • Bilingual preferred

Our Theme Parks and Resort Hotels operate 24 hours a day, 365 days a year and some shifts may start as early as 5:00am while some may end as late as 3:00am, 4:00am or 5:00am Must be flexible and able to work a variety of shifts including days, nights, weekends, holidays and special events.
