o Promote, work, and act in a manner consistent with the mission of Riverview, a newly renovated, licensed, multifunction restaurant, bar and function venue in the historic district of Burlington, New Jersey. Our mission is to deliver house roasted coffees, a casual, locally and sustainably sourced (where possible) seasonally-inspired bar and dining menu, craft beers and a large range of wines and cocktails serving the local community and destination diners in our large venue including the outdoor bluestone terrace and events and functions
o Food Safety & Hygiene
o Know, follow and promote company policies in FS&H
o Inspect and clean, and maintain food preparation areas, such as equipment and work surfaces, or serving areas to ensure safe and sanitary food-handling practices.
o Ensure food is stored and cooked at correct temperature by regulating temperature of ovens, broilers, grills, fryers, roasters, and other kitchen equipment.
o Ensure freshness of food and ingredients by checking for quality, keeping track of old and new items, and rotating stock.
o Food Preparation
o Knows and complies consistently with the restaurant’s standard portion sizes, cooking methods, quality standards and kitchen rules, policies and procedures.
o Responsible for the quality of products prepared
o Butcher and dress animals, fowl, or shellfish, or cut and bone meat prior to cooking
o Stock and maintain sufficient levels of food products at line stations to support a smooth service period.
o Cook/prepare meats, fish, vegetables, desserts and other foods according to recipe or direction, observe and test foods to determine if they have been cooked sufficiently, using methods such as temperature testing, tasting, smelling, or piercing them with utensils
o Weigh, measure, and mix ingredients according to recipes or personal judgment, using various kitchen utensils and equipment
o Portion, arrange, and garnish food, according to standard portion sizes and recipe
o Substitute for or assist other cooks during emergencies or rush periods, assist in food prep assignments during off-peak periods as needed
o Closes the kitchen following the closing checklist for kitchen stations and assists others in closing the kitchen.
o Attend all scheduled employee meetings and offers suggestions for improvement.
o Coordinate with and assist fellow employees to meet guests’ needs and support the operation of the restaurant.
o Fill-in for fellow employees where needed to ensure guest service standards and efficient operations.
o ServSafe or equivalent food handler certification
o Two or more years of experience in kitchen preparation and cooking
o Able to communicate effectively with managers and kitchen personnel
o Able to reach, bend, stoop and frequently lift up to 50 pounds
o Able to work in a standing position (up to 9 hours)
