Role Snapshot – Grill Cook

As our Grill Cook, you will be the point person on the hot line—expertly grilling hamburger, hot dogs, and italian sausages to order, while ensuring every plate meets Joe’s exacting standards for flavor and presentation.

Key Responsibilities

Grill Station Execution

• Grill proteins and vegetables to precise temperatures and guest specifications.

• Prepare and stock marinades, rubs, sauces, and garnishes for efficient service.

• Monitor cook times, rest periods, and holding temperatures to guarantee optimal quality.

Prep & Production

• Fabricate and portion meats, seafood, and produce for daily use.

• Set up, break down, and deep-clean the grill station; maintain all equipment in safe, working order.

Quality & Food Safety

• Rigorously follow ServSafe, HACCP, and in-house standards for storage, labeling, and sanitation.

• Conduct line checks to verify freshness, seasoning, and presentation.

Teamwork & Service

• Coordinate ticket flow with pantry, sauté, and expo to ensure on-time service.

• Engage courteously with guests on special requests and dietary needs.

What You Bring

• Grill or line-cook experience in a fast-paced kitchen.

• Working knowledge of protein doneness, safe internal temperatures, and cross-contamination prevention.

• Strong knife skills and familiarity with basic prep techniques.

• ServSafe Food Handler certification (or willingness to obtain).

• Dependability, stamina, and a passion for great food.
