SUMMARY
Responsible for the daily operations of the pastry department for banquet functions, restaurant operations, storeroom requisitions, daily production sheets, consistency of plate presentations, as well as product specification and standardized recipes in order to assist in reaching profitability, guest satisfaction, workforce strength and compliance goals.

RESPONSIBILITIES

• Maintain daily production sheets to ensure proper delegation of pastry department and food product preparation.
• Schedule daily and weekly production accordingly to forecasted banquet, restaurant and venue needs to maintain cost percentage and meet forecasted budget.
• Assist in the development and maintenance of standardized recipes for the pastry department.
• Provide strong leadership, active supervision and timely coaching and counseling. Encourage mutual respect among team members by setting positive examples.
• Apply a high standard of creativity to assist in the development of dessert presentations for restaurants and banquet use with the Executive Pastry Chef.
• Maintain daily inventory sheets to ensure proper rotation and utilization of food products on a daily basis.
• Conduct daily walk through of dry storage, refrigerated/freezer areas, as well as venues selling items from pastry department.
• Create innovative centerpieces and decorations for pasty and banquet displays.

• Carries out supervisory responsibilities in accordance with the organization’s policies and applicable laws.
• Responsibilities include interviewing, hiring and training employees; planning, assigning and directing work; appraising performance; rewarding and coaching employees; addressing concerns; and resolving problems.

• Supervise 12 employees
• Supervise 20 employees indirectly

• Associate’s/Technical Degree;
• 3-5 years of experience;
• 1-3 years of supervisory experience or equivalent combination of education and experience.

Job Summary
Prepares and delivers relevant and current curriculum using a variety of teaching methods and standardized assessment tools that accurately reflect effectiveness of course content.

Essential Functions & Responsibilities

• Measures student understanding of course content in an objective fashion
• Maintains accurate records of student attendance, academic achievement, and performance in accordance with university policies and procedures
• Distributes to each student, in each course, a full, typewritten syllabus regarding course objectives, texts, attendance policy and materials required for course and evaluative criteria
• Posts and maintain regular and adequate hours for student consultation per guidelines set forth in the faculty manual
• Participates in the university faculty-advising program
• Refers students to appropriate university sources for information, guidance, financial assistance, career development, etc.
• Communicates early with any student in danger of failure or in need of individual counseling
• Attends all scheduled faculty meetings, department meetings, faculty orientation, faculty training ("in-service") programs, and committee meetings of which they are members
• Serves as committee member as assigned by the department chair, dean, or as elected by the faculty members at large
• Participates in student orientation, admissions events, open houses, family weekend, competitions, and professional conferences as directed by the department chair or dean
• Supports extracurricular activities by attendance and/or service as an advisor
• Attends commencement ceremony in appropriate academic attire, as well as other programs as designated by the department chair or dean
• Runs an organized and realistic bakeshop in the manner of an executive pastry chef while maintaining a classroom setting
• Performs other duties assigned
