Job Title: Assistant Pastry Chef

Description:

SUMMARY
Responsible for the daily operations of the pastry department for banquet functions, restaurant operations, storeroom requisitions, daily production sheets, consistency of plate presentations, as well as product specification and standardized recipes in order to assist in reaching profitability, guest satisfaction, workforce strength and compliance goals.

RESPONSIBILITIES

  • Maintain daily production sheets to ensure proper delegation of pastry department and food product preparation.
  • Schedule daily and weekly production accordingly to forecasted banquet, restaurant and venue needs to maintain cost percentage and meet forecasted budget.
  • Assist in the development and maintenance of standardized recipes for the pastry department.
  • Provide strong leadership, active supervision and timely coaching and counseling. Encourage mutual respect among team members by setting positive examples.
  • Apply a high standard of creativity to assist in the development of dessert presentations for restaurants and banquet use with the Executive Pastry Chef.
  • Maintain daily inventory sheets to ensure proper rotation and utilization of food products on a daily basis.
  • Conduct daily walk through of dry storage, refrigerated/freezer areas, as well as venues selling items from pastry department.
  • Create innovative centerpieces and decorations for pasty and banquet displays.
SUPERVISORY RESPONSIBILITIES
  • Carries out supervisory responsibilities in accordance with the organization’s policies and applicable laws.
  • Responsibilities include interviewing, hiring and training employees; planning, assigning and directing work; appraising performance; rewarding and coaching employees; addressing concerns; and resolving problems.
  • Supervisory responsibility over Pastry Shop
  • Supervise 12 employees
  • Supervise 20 employees indirectly
EDUCATION AND/OR EXPERIENCE
  • Associate’s/Technical Degree;
  • 3-5 years of experience;
  • 1-3 years of supervisory experience or equivalent combination of education and experience.

Required Qualifications

  • Minimum of a bachelor's degree in related field from an accredited institution
  • Thorough knowledge of various pastries and baked items as well as the ingredients used in a typical bakeshop
  • Minimum of eight years' industry work experience in related field or minimum of five years' supervisory experience in related field
