Executive Chef Careers

As one of the highest in command in a restaurant, directly under the owner, Executive Chefs maintain many responsibilities in food service establishments.  Their goal is to maximize profits while minimizing costs and losses.  In smaller operations, they may also assume the role of general manager or owner.  They run all kitchen operations and preserve quality standards.  They develop and test recipes, determine serving sizes, certify uniformity, ensure all government standards are met, maintain inventory, and plan menus.  Executive Chefs may be in charge of one facility, or all kitchens in a larger organization such as a hotel. 

Executive Chefs must be dedicated individuals, due to the fact that they generally put in the most hours in an establishment, overseeing all operations.  They commonly work 12-15 hours per day, up to seven days a week.  When employees are absent, they must fill that position with little or no notice.  Food service is a very hectic occupation; professionals must handle irritated customers, stubborn employees, and any issues that may arise with little or no disruption to their clientele.  Executive Chefs must have the ability to move tables or chairs to accommodate customers, and may occasionally endure cuts, burns, or bruises associated with daily activities.  These careers are very fast paced and generally draw energetic and devoted individuals. 

Executive Chef careers are commonly filled by experienced chefs, so any past experience is helpful when entering this position.  Many companies offer detailed training for candidates with no prior experience, but those with a minimum of a Bachelor’s degree tend to have better opportunities.  There is a voluntary certification available to interested candidates.  In order to obtain the Foodservice Management Professionals Certification, candidates must complete designated classes, pass a written examination, and meet work experience requirements.  Individuals with a neat appearance, good communication, and excellent problem solving skills will have the highest likelihood of success. 

As food service owners begin operating their facilities less, they are hiring Executive Chefs to supervise activities.  Food service is such a large occupation that numerous openings will be available.  Although average occupational growth is projected, there is high competition for management careers, and candidates with extended education will have the most opportunities.  Salaried employees will have better opportunities than those who remain self employed.  For more information on a career as an Executive Chef, please visit the following sites:
